Viral Brownie Pudding, But Make It Couch-Approved
Here’s my moment: I’m sitting on the couch, in my pajamas, favorite show (it’s obviously Survivor), and my happy little hands are wrapped around a warm ramekin filled with the most luscious sticky brownie pudding.
It’s Tuesday and the little things are the big things, for no other reason than that. Why I love them:
- That warm feeling of arms wrapped around us is what February really calls to us.
- Every time you poke your spoon into the top layer, it creates a very subtle crack, so every bite yields a mix of gooey brownie and a delicately chewy, crisp top. Wow, yes.

Of course, the original viral brownie pudding is an Ina recipe. i made it in Classic, large batch form And it’s a lot of fun. but then i saw this video For single-serving version (Talent) ramekins (affiliate link)And I knew this was my move. The way you can swirl your spoon around the ramekin and dig in to get the perfect ratio of chewy to sticky? Ugh. How nice. Is anyone else this weird?
The version you see here is a bit of a mashup between the two, with enough batter to make two robust servings (or 3-4, if you want them a little smaller). We made these again the next night when a friend came over and the three of us sat quietly by the fire and basked in these delicious, warm delights.
