That street corn dip on top is a game changer.
TLDR: Roasted sweet potatoes, spicy marinated ground beef, pickled onions, and a street corn-inspired dip on the whole thing. You can also eat it with chips, or eat it with a fork. It is delicious.
Do you remember the Hot Honey Cottage Cheese Bowl trend from a few months back?
A trend that’s been going on for a while has been to include sweet potatoes and ground beef, a dollop of cheese straight on top and a drizzle of warm honey. My hot opinion: It always feels a little forced. A slice of cheese straight on top? Just…straight?! I am not aware of this.
Hear me out: It’s the same trend, but vastly improved. The cheese now transforms into a dip reminiscent of street corn that is so full of flavor that the entire bowl just works. I like this much more than the original.

- All the elements work beautifully for meal preparation.
- Family friendly because each person can choose the elements they want.

Not sure what’s going on with me – usually I’m late and/or oblivious to recipe trends, but this is the third “viral” recipe trend I’ve tried (and loved) in a month. (See also: Brownie Pudding and Broth Bowls for Two.)
There are a lot of weird things about living in these Internet- and social-media-heavy times, but the abundance of fun and amazing viral recipe ideas is actually a nice little perk!
